Happy Monday
Just had these tasty pancakes so all happy to start off a great week :)
Recipe
1 1/2 cups milk
1 egg
2 tsp vanilla extract
2 cups self raising flour
1/4 tsp bicarbonate of soda
1/3 cup caster sugar
butter for pan
Whisk milk, egg & vanilla together. Sift flour & bicarbonate of soda in a bowl mix in sugar to bowl make a well add milk mix until combined.
Heat frying pan with little bit of the butter add required amount of mixture and cook away.
You can add sultanas to mixture (my Grandad loved that) I like squeezed lemon juice with a little sprinkle of caster sugar, my son loves maple syrup & my daughter loves nutella.

Gingerbread Men
Well my boy is 9 today he asked me if I could make some Gingerbread Men for him to take to school today so last night I baked & baked these little fellows the recipe was easy it was the cutting out that was hard as the mixture was so soft I think a few had broken legs which made me think of the poor gingerbread man in shrek!!
I patched them up well apart from the poor fellow bottom left I forgot to sort his head out :( I am sure the kids wouldn't think twice as they bite into them hee hee.
Hope the basket I sent comes home empty.

Relaxing Sunday
Thought I would bake a cake for when I found time to sit & relax I did get chance for some of the day, how about you did you get to have a relaxing sunday or were you rushed off your feet?
Mmmm the smell of coffee & that cake it was delicious, I could eat it all again :) I am celebrating my hubby has decided the shed is for me he moves out this week & I get all that space to create, will post some pictures of the make over A.S.A.P

Pretty Pink
I thought I would try the pink spotty cupcake cases today, they are so pretty, I didn't want to pour the cake mixture into them at first, glad I did though as they turned out a treat.
So as the cases stay nice keep the temperature of the oven at 170deg and once you get to 15 minutes just keep your eye on them so don't leave in to long & spoil the pretty cupcake cases.
My recipe is from the cupcake cook book so simple & tastes lovely.
2 3/4 cups plain flour
2 tsp baking powder
200g softened butter
1 3/4 cups caster sugar
4 eggs
1 tbls vanilla extract
1 cup milk
Sift flour & baking powder. In a separate bowl cream butter, add castor sugar bit at a time beat for 2 mins till fluffy & sugar dissolves. Add eggs one at a time beat for 1 min add vanilla extract mix till combined.
Add a third of flour to creamed mix & beat. Add half milk mix till combined, Repeat until milk & flour all used don't over beat as mixture might toughen.
Spoon mix into cupcake cases only three quarters full bake for 15 to 18 mins in a pre heated oven temp at 170deg & hey presto all done!!
It makes heaps of cupcakes so I would half the ingredient unless you want lots, then go for it well enjoy I am off to have a taste before they all go as they won't last long in my house :)))
